I totally want to make cupcakes with cream cheese frosting but don't dare because I'm scared if I eat the frosting I'll have an other GB attack sigh..

I'm still tempted to make them and only put a tiny bit of frosting on mine, and keep all the frosting in a separate container.

Could you make a vegan "cream cheese" frosting?

• 1 container Tofutti Better Than Cream Cheese
• 1/2 cup soy margarine
• 2 cups powdered sugar
• 1 tsp vanilla extract
• 1 1/2 tsp lemon juice

Combine the cream cheese and margarine. Slowly add the powdered sugar, then vanilla and lemon juice.

Do you know how Tofutti compares "fat" content wise to regular cream cheese?

Also sad.. but it's a 3/4 hour drive away to get it I wonder if the Neufchatel cream cheese would be better... less fat, is what it says online so I would think it should be... hmm.

Not sure about the fat content, I just googled "vegan cream cheese recipes."  I think not being able to enjoy a cupcake constitutes a real emergency, and I wanted to help find a solution ASAP

those looks good!  thanks for adding to my collection of cupcakes I'd like to make

side note: do you think you'll have your gallbladder removed at some point?  I'd never heard anything about gallbladders before, but apparently my MIL is having her's out next month (H literally just told me yesterday!).  It's been hurting for the last couple years and there isn't anything obviously wrong (like cancer), so I guess they'll just take it out.
