Roasted a chicken for the first time in my life, now what do I do with it?
Don't laugh lol.
I've made countless turkeys and send all of the leftovers home with my guests.
What can I make with the leftover white meat? MH is using the carcass for stock and he'll eat the dark meat. I'd like to get a few more meals out of the white meat, esp for the kids. If I make something else is it going to ruin it if I have to cook it or warm it through again?
I was thinking enchiladas or quesadillas but I isually cook the chicken in the seasoning...
Help?

You could shred the white meat and heat it up with the seasoning in a pan.
CHICKEN SALAD!!!!!! W/raisins and walnuts. YUM
Calzones (I like pesto, roasted red pepper, chicken, mozzarella)
I also like to take crescent roll dough, the one without the creases, and put it with cheddar and bacon then fold it until little squares.

I made this chicken tortilla soup with leftover roasted chicken the other day and it was delicious! Might be a little spicy for the kids, but you could easily leave out the hot pepper.
you can do pretty much anything-
but what is so great about chicken salad? I just can't find the appeal? is it cold? hot? help me figure this one out, lol!

Lol I had a feeling this post prompted the FB debate. I don't like it either.. I don't like mayo and chicken then throw in celery and just BLECH for me.. Lol
