Roasted a chicken for the first time in my life, now what do I do with it?

Don't laugh lol.

I've made countless turkeys and send all of the leftovers home with my guests. 

What can I make with the leftover white meat? MH is using the carcass for stock and he'll eat the dark meat.  I'd like to get a few more meals out of the white meat, esp for the kids. If I make something else is it going to ruin it if I have to cook it or warm it through again?

I was thinking enchiladas or quesadillas but I isually cook the chicken in the seasoning...

Help?
