Looking for low-carb, high protein, high veggie content vegetarian dish
Sorry, I know it's a lot of qualifications. Any suggestions? Doesn't have to be super low-carb, but I just don't want it to be super starchy, as we'll probably have bread along with it, too.

I like to make something like this ratatouille and add in some white beans to bulk up the protein. You can serve it with some crusty bread.

black bean quinoa salad with tomatillo salad
braised white beans with zucchini, tomatoes, and potatoes
chickpea and butternut squash salad
rice noodle salad with peanut dressing

You could replace the chicken with tofu in this dish and it would fit your qualifications.
