baking cupcakes ahead of time- your best tips needed

i am SO not a baker. i can screw up boxed cake mix, i swear.

i am making 75 cupcakes for santino's birthday party this weekend. i wanted to get started tonight, and then frost them either tomorrow night or saturday morning.

a few questions-

how should i store them so they stay moist but not wet with condensation?

anything i can add or modify when it comes to the boxed cake mix to make them tastier/better?

can i actually frost them the night before, or is it best to do the morning of? im using plain ol betty crocker frosting from the container (i know i know...blasphemy!)

  • you have to let them cool completely. then store in tupperware.

    i iced the ones i made for m's party that morning, right at the place we were having the party.  it made transporting them that much easier since i didn't have cupcake carriers for 160-something cupcakes...

    i don't know that i would mess with a mix too much...maybe add chocolate chips, white chocolate chips something like that...some of the boxes have suggestions for things to add, but if you're not a good baker, i think you might be best served keeping things basic.

  • Let them cool completely before putting them in any tupperware.

    I always ice the night before. And if it's winter I put them in the car that night. They stay cold and its one less thing I have to pack up in the AM.

    Also, I ice with my icing spatula. SOOOOOOO much easier than a knife.
