Does anyone have/know someone that has celiac disease?

My BFF has it. Just diagnosed last week and has a meeting with a nutritionist tomorrow. A group of us girls are going away for a weekend and I want to plan a dinner that is gluten free, so she doesn't have to prepare her own dinner. Basically, so we can all eat together.

Any full dinner ideas/recipes? I'm looking for the whole thing, not just side dishes.

  • I have 3 friend with it and it isn't too hard to cook around it.  If you are making a dip item, you can serve it with veggies and rice crackers.  They are actually pretty tasty!

    You can make things with rice flour if you are baking or breading something.

  • She also can't have raw veggies or cooked veggies with a skin, like peppers and tomatoes. Celiac is just one her digestive issues.

    Well does that rule out tomato sauce?  I have a friend with celiac that likes gluten-free pizza.  She gets it at Mellow Mushroom.

  • Something to think about - a lot of things that we don't necessarily think have gluten in them, actually do - like spices. Also, brands will label themselves as gluten free but not truly be gluten free- be sure to check for certification. My cousin has severe celiac disease and she even has to use her own set of pots, pans, knives, cutting boards, glasses, sponges, etc. Even a few breadcrumbs left over from another meal will cause a severe reaction.

  • PP had a good point about things you don't think of having gluten in them, as I have that problem with lactose sometimes. Like certain lunchmeats, which I wouldn't have thought of before I started reading labels.

    If she can't have tomato sauce, obviously pizza is out, but that is a good idea if not. So is pasta since you can do a lot of different add ins or sauces for any other dietary needs.

    Also I have a friend who has celiac, but she can tolerate certain sourdough breads. You could check into that if you did want something with bread?

  • I have a friend with a gluten allergy and another with gluten sensitivity. This is the menu from my last dinner party:

    Chicken curry and rice

    Lentil Dal

    fresh corn salad

    store bought Naan (not gluten free) and gluten-free bread (I keep some in the freezer and pull it out when having the girls over)

     Iced Oatmeal Cookies (I make them with butter, not margarine)

    I actually find the difficult part is keeping the folks who can eat gluten from feeling deprived. Gluten-free versions of breads and pastas taste different and personally, I dislike gluten-free pastas. I don't want anyone feeling resentful of our friend who can't eat gluten, so I usually just make something that's doesn't have gluten in it to start with, rather than adapt something that usually has gluten. My other favorite meals for mixed gluten-free and non-gluten-free gatherings are 1) noodles, chicken satay and peanut sauce, 2) enchiladas with Mexican sides, 3) stews of any variety (not thickened with flour) with a gluten and gluten free bread option.

    Also, some bakeries make gluten-free cakes and cupcakes which can be a fun treat for dessert. 

  • Oops, I forgot to mention that you'll have to use gluten-free oats for the cookies. Oats are naturally gluten free, but are often contaminated by wheat products during processing. You can buy uncontaminated oats, though. I use these.
