  • I'm keeping it pretty simple this week.

    Friday: mushroom pizza

    Saturday: chicken tikka masala over basmati rice

    Sunday: kofta

    Monday: rice noodle salad with peanut dressing

    Tuesday: black bean quinoa salad with tomatillo salad

    Wednesday: leftover rice noodle salad

    Thursday: out

  • I'm in the middle of mine now.  I'm not happy with it at all, but here's what I have:  (I've edited my menu and am much happier with it now!)

    Sat-Fried clams, mac n cheese, green beans

    Sun-Pork chops with red eye gravy, grits, and some type of veggie

    Mon-Chili Lime Tofu over jasmine rice with eggrolls

    Tues-Cheese and black bean enchiladas with green sauce with brown rice

    Wed-Baked ziti with meat, salad, and garlic bread

    Thurs-No Butter Chicken over rice with roasted broccoli

    Tue - Pernil (from freezer), white rice, beans
    Wed - Spiced Chipotle Honey Chicken Breasts with Sweet Potatoes, Green Beans
    Thu - Pan fried perch, spaghetti squash with hazelnuts and herbs
    Fri - Thai Turkey Burgers with Peanut Sauce, Asian Slaw

  • I have mine partially done.  Here's what I have so far:

    Ravioli with asparagus, tomatoes and shrimp

    Honey Sesame Chicken from Lishie's blog with Jasmine rice and broccoli 

    Butternut Squash soup and garlic bread

    I'm really excited to try some new recipes this week.  :0)

  • Sunday- chicken fricasse, roasted potatoes

    Monday- veggie frittata, fruit, toast

    Tuesday- orange ginger beef stew, rice, broccoli

    Wednesday- spicy chicken lo mein, stir fried mixed veggies

    Thursday- slow cooker buffalo chicken chowder and salad 

  • Sunday: don't have anything planned, DH won't be back in town until late that night

    Monday: shrimp tacos with jalapeno ranch sauce, sauteed snap peas 

    Tuesday: DH and I are going to have a cook out and hang out in the backyard with drinks :) We are grilling brats and having potato salad and some type of grilled veggie 

    Wednesday: ranch pasta with spinach, tomatoes and bacon 

    Thursday: chicken BLTs, sweet potato fries, roasted broccoli 

    Friday: nothing planned, DH's team is hosting a tournament so probably take-out after 

    Saturday: take-out after DH's games

  • I'm working on my menu now.  So far I have:

    veggie enchiladas and

    lemony kale pasta, both from Annie's Eats, and

    PW spinach and mushroom quesadillas.

    S- lc, gf Cajun meatloaf, steamed veggies, rice
    M-spaghetti and garlic bread for h as I have 2 classes 
    T-lc, gf Green chili cheese turkey burgers & salads 
    W-balsamic chicken with pine nuts rice/or potatoes and salads 
    Th- leftovers from anytime this week  
    F- sushi or grill fish depends on when h's friend gets in
    S- h out not sure what I want yet lol

  • I still need one more day, but here is what I have:

    Sunday - spetzofai (Greek sausage and pepper stew), salads, homemade bread

    Monday - chicken, mushroom and wild rice casserole, roasted brussels sprouts

    Tues - chicken enchilada spaghetti, salad

    Wed - almond pancakes with some sort of fruit, turkey sausage

    Thurs - buffalo chicken (just chicken cooked in a skillet, topped with buffalo sauce), not sure of sides yet

    Fri - ? (something vegetarian)

    crock pot french dip with homemade fries

    tonight -- out to a cajun/korean fusion place, should be interesting!

    tomorrow -- roasting a chicken, roasted root veggies and some other side to be determined

    tuesday -- spanish shrimp with orzo

    wednesday -- DH is at a meeting, I will have leftovers or a big bowl of popcorn

    thursday -- southwestern chicken panini and sweet potato tots

    friday -- grabbing sushi or a pizza on the way home since we'll be doing prep for..

    saturday -- hosting a local nestie homebrewing gtg, we're doing a chili bar!

  • S - shredded Italian beef sandwiches with provolone on ciabatta.  I bought this Italian Beef starter in Williams Sonoma today, so excited to try it out!

    M - baked chicken thighs with lemon and garlic, spaghetti w marinara, and green beans

    T - BBQ chicken pizza

    W - orichiette with spinach, white beans and mascarpone

    Th - not sure, I have a dr appt after work, God knows how long I'll have to wait

    F - eggplant rollatini and salads

  • Wow, super organized!  My husband generally picks something up on the way home from work (European style), so we go with what we are in the mood for that day. Also, we don't like to freeze our meat before cooking, so it is always fresh.

    We sometimes pick up dinner on the way home each night, getting what strikes our fancy at the store, but doing it all the time would play havoc with my budget and we'd have tons of leftovers that may never get eaten/used.

    How do you manage to keep your budget under control?  What do you do with all the leftovers?  What do you do if what you find for dinner takes a long time to cook?  I am far too scheduled to have no idea of what is for dinner until that evening.

    We brown bag our lunches, and almost always take leftovers, if there are any.  We don't have a set budget for groceries, we just buy what we need.  My husband does all the cooking, and we also eat dinner around 7:30 or 8:00 so time is not a factor so much.  I admire all you ladies for having a planned menu, but we just do it on the fly here.
