what to do with peppers besides stuff them
I have a bag of mini red, yellow, and orage bell peppers from Costco. Usually, I just eat them with my lunch. We had to go out of town for a couple of days for a funeral, so I haven't had a chance to eat very many and I think they are just a few days away from being trash. Any ideas for what to do with these?

roast peppers in oil
prep & freeze for cooking in other dishes or use for aromatics
toppings/fillings for sandwiches, pizzas, calzones, tacos/burritos/fajitas, etc

One of my favorite local restaurants in NOLA serves bell pepper rings. They slice the bell pepper into rings about 1/4 of an inch, dredge in flour, a milk and egg wash, then in cornmeal-based fish fry coating, before frying the rings until crisp and golden brown, and serving with a side of ranch dressing. I have been wanting try it at home since I found out how they make them.
