Bread!

Bread is on my list of things to make, 30 before 30, and today is the day. I am very scared. I have the active dry yeast and the KA mixer, now for the recipe?? I have seen so many! What is a good one for a very inexperienced bread maker? And what is the difference in flour and bread flour? And how hard is kneading ... That is the part of the bread making that actually scares me the most. Bread is so intimidating to me, someone please convince me it's not that bad!

Re: Bread!

  • This is a super easy recipe. I used it when I made bread for the first time - it's the Artisan Bread in 5 Minutes a Day one :) Kneading is super easy for me because I use my KA!

  • First time I ever attempted or made any kind of bread it was Challah bread and it came out really well.

  • Practice makes perfect with yeast.  Make sure you follow the recipe exactly.

As for kneading, your goal is to get the dough nice and smooth, and you want to knead for a good while, but not overknead.  Use the heel of your hand to push the dough, fold, turn, and repeat.  It'll make sense once you do it.  Relax and enjoy :)

  • It's not that hard. Bread tastes great, even when it's not perfect - you have a lot of wiggle room. Anyway, if you want to build confidence, try an Irish Soda Bread - you use baking soda to rise the bread and its basically fool proof.

  • I only recently started baking bread - it isn't nearly as scary as I thought it would be :)
