WWYD: With an amazing brick of smoked gouda?

I got a nice looking brick of smoked gouda yesterday and other then eating it want to use it in a nice main dish. Any good ideas?

I would use it in Giada's recipe for Penne with Roasted Vegetables. Sub it in for the smoked mozzarella.

I wonder how it would do as a welsh rabbit. I've been making this one since it came out in the magazine. I'm a gourmet nerd. The only thing I change is I use different bread and sometimes I broil it with the sauce until it browns a little. Awesome with tomato soup. I've used lots of different cheeses too although never smoked gouda.

I have not either, my friend stpetegirl (she posts on WC occasionally) made this for me one night (I had never even had grits before, and was quite nervous that I wouldn't like it) with gouda and it was AMAZING.
