Cake question (advance/freezing)

I have decided to make the cake for DHs baptism in April, and I am making a tiered cake.  How far in advance is too far to bake the cake?  I was thinking of freezing the layers in several layers of plastic wrap.  Would baking the weekend before and freezing for 5-6 days be too much, or would that be OK?

  • I think that would be fine as long as they are wrapped well.
  • I freeze. I have to.. depending on how many cakes I have due. I bake Wednesday nights... and freeze. I crumb coat Thursdays and do accents to dry... and decorate Friday nights or Sat nights depending when cake is due.

    If I have a load of cakes due I will start baking a week and a half out. I wrap in saran wrap.. .wrap in foil.. .wrap in ziplock and freeze. 

    Defrost cakes while wrapped...but work with the cake while it is really cold. Make torting and crumb coating much easier. Good Luck!
