Please recommend your favorite soup
I want to make a soup this week, but I want something that I don't usually make (or have never made). We don't eat beef or pork, but are very open to all kinds of vegetables, pastas, and chicken and seafood.

I generally have all the ingredients on hand for Potato Soup with Rivels, which is DH's favorite. http://lynnescountrykitchen.net/amish/rivelsoup2.html I use vegetable stock in place of water to add another layer of flavour.

taco soup, there are a million recipes, just omit the meat & use beans if you prefer.
my favorite go to super easy soup is tortellini soup:
melt 2 tbsp butter in stockpot
saute garlic in it (2-3 cloves)
Add chicken broth, bring to boil (I usually use about 1 to 1 1/2 of the boxes)
add 1 bag frozen tortellini (or equivalent in nonfrozen kind)
cook partway
Add 1 package froz chopped spinach (thawed or at least partially thawed & broken up) and 1 can stewed tomatoes or diced tomatoes (my faves are muir glen fire roasted). Break up stewed tomatoes w/ back of spoon as they heat up
Bring all to warm, make sure tortellini is cooked and served topped w/ parmesan. yum!
