Dinner ideas with 14-oz fresh mozzarella?
I just discovered I have 14-oz of fresh mozza in the fridge and it expires next Monday (3/12).
Any ideas I could put in for dinner?

What about some take on pasta primavera (or as I like to call it, "pasta and stuff")? You could saute any appropriate veggies you have with garlic in olive oil and add a few splashes of white wine and or chicken broth. Then toss with pasta and and heat with a little pasta water to thicken the sauce. Just before serving add diced moz and serve. The bits will melt from the heat of the pasta.
I usually always make sure I have grape tomatoes or dried tomatoes for my "pasta and stuff" and pine nuts. Lemon zest and parsley also add nice flavor.
I like giada's checca sauce, she does it with fresh mozz in the hot pasta tossed w/ the sauce.
I just made a pasta salad w/ some fresh mozz in it.

you could also do a caprese salad with some heirloom tomatoes and basil.

no offense but I could eat this much mozzarella in one sitting with out helping it along....but I'm fat and italian like that
ever made a panzanella...cube the cheese, with either tomatoes or peppers, onions, basil...toss with a fresh vinagrette...take a loaf of italian bread, cube, and toast...toss with the other stuff before serving
