PSA: Ridiculously amazing healthy dinner recipe inside
Last night T and I made Creamy Avocado Pasta for dinner. I know, I know, ick, right? It was absolutely INSANE and one of the top 10 meals I've ever made. We were fighting for the last serving.
The avocado was really mild and made it very creamy with no dairy but tons of healthy fats. I used whole grain linguine and added peas, cherry tomatoes and swiss chard to bump up the nutrients.
Oh, and it took maybe 20 minutes. Maybe. Minimal fuss, minimal ingredients, maximum deliciousness and nutritiousness

sounds like something we would love to try! I am always looking for quick meals that aren't too complicated and are also healthy. I would definitely be adding some sort of cheese, thanks for your tips for the addins!

That sounds delicious. I might sub lemon for lime juice though because I love lime and avocado together.
I wonder what would happen if I did try to re-heat it though, like for lunch the next day?
