Roasting pork?

I have a 2.5lb center cut pork loin that I'm going to be roasting for dinner tonight.  The recipe I'm following calls for a 7lb loin cooked at 300 for 6 hours.  Since this is smaller I'm sure I need to reduce the time but I'm not sure by how much.  I'll use my thermometer to make sure the meat is done but does anyone have a rough idea of how much time this will take to cook so I know when to throw it in the oven?

Thanks!

Re: Roasting pork?

  • This is what I did recently for a 3 lb pork loin

Cook uncovered in a 475 degree oven for 20 minutes. Turn oven down to 350 and bake covered for another hour, or until the temperature of the pork comes to 150-155 (it will raise another 5-10 degrees after cooking).
