vegetable suggestions to go with "boring" grilled chicken?
I'm just making grilled chicken for dinner, any suggestions for veggies to "spice" it up?

Are you marinating the chicken? If so, what flavors? And if not, why not?? ha. Even a spice rub would help.
What you serve with it depends on the flavors in the chicken, I think. Some of my favorite veggies are roasted broccoli, roasted Brussels sprouts, roasted asparagus, and even roasted cauliflower. Just toss with olive oil, salt,pepper, and roast.
I also love sauteed broccoli rabe - blanch and then saute in OO with fresh garlic and red pepper flakes.

I agree with MaryEllen that you should at least marinate the chicken for a few minutes or do a spice rub.
Here are some of the side dishes we did for a side dish recipe swap awhile back.
When my husband grilled chicken last week, I made macaroni and cheese-style cauliflower to go with it. I basically took my favorite mac and cheese recipe, but replaced the noodles with cauliflower.
