Help! Dinner is getting cold. What is this on my cheese?
After grating up some hard asiago, I noticed that it had little white spherical beads on/in it (I saw them inside a little air pocket). Is this mold? Or some part of the aging process? Can I eat it or not?

Okay. I did google and found something and crystals, but the pictures looked more like white patches in the cheese. This looked like sprinkles. Is that what you've seen?
It should be just fine. Some cheeses have some firm, crunchy crystals like that in them.

My favorite cheese, aged gouda, has these...and they are DELICIOUS! Go for it.
