So I'll start by introducing myself, I used to post regularly on the nest a few years ago but went through a divorce and kind of fell off the map. I recently rejoined because i miss the content but thats why I'm now a newbie.
I have recently been tested by my doctor and found to have an elevated level of thyroid anti-bodies. Its just the early stages but he feels I will probably end up on TSH replacement soon. I have been doing a lot of research and seen that some people have had luck in reducing their anti-body count with getting very healthy, reducing stress, exercising and following a Gluten-Free diet. I know this is a stretch but I go back in 6 weeks for more blood work and I figure I would like to at least say I tried.
I know back when I was here before there were a few awesome Gluten-Free blogs. Can anyone that has something like that let me know, I have read up on the basics but could use some real world knowledge on how to kick this off and not feel so intimidated by everything I suddenly can't eat.

I suggest googling some resources for celiac disease. The treatment is a 100% gluten free diet, so there are several websites with excellent resources and support for you. You don't have to have celiac to go GF.
If you are looking for a basic starting point, think of ethnic foods that are corn or rice based. Like mexican or chinese food. The hard part is to read lables for gluten additives. For example, most soy sauces have gluten - but Le Choy is GF. And read labels for corn chips - a few add flour. Once you know your go-to brands its a lot easier.
Awesome to know about LeChoy I love chinese but wasn't sure I could still make it and we do a lot of Tex Mex here so those make for easy choices.

Soy sauce - switch to tamari which is GF
All purpose flour in baking (not exactly for yeast bread baking) - switch to GF flour blends that include xanthan gum like Better Batter brand, Tom Sawyer brand, Pamela's brand
All purpose flour for dredging - switch to cornstarch, sorghum, corn, tapioca, potato or any gf flour
Breadcrumbs - switch to crushed gf crackers or even potato or corn chips or gluten free pretzels (Snyder's brand)
Dry pastas - switch to gf pastas made from corn, rice, quinoa
Sandwich breads/buns/bagels/muffins - switch to prepared gf breads like Udi's brand, Rudi's brand, Schar brand, Glutino brand
Frozen waffles - switch to Van's brand
Thanks, I know it will get easier in the long run, its kind of frustrating right now but honestly on most days I don't eat a lot of bread/baked goods what have you, its just frustrating not being able to pick up and eat any random food I want.
Hopefully once I get a plan and my pantry stocked it will get easier.
