Dessert Menu Critique Needed
A local running store that I frequent is having an in-store event next week and has asked me to provide treats for about 150 ppl. The event will be from 11-6, with people coming and going throughout the day, probably each spending 30-45 minutes in the store. I want to provide a decent variety that will be fine at room temperature for seven hours. I'm thinking:
Brownies (possibly these)
Lemon Bars
Salted Caramel Bars (made with homemade salted caramels)
Chocolate Chip Cookies
Chewy Coconut Chocolate Almond Butter Cookies
What do you think? Should I add anything, or do you think this is enough variety?
Re: Dessert Menu Critique Needed
Thanks for the input. The chocolate almond butter cookies are the healthier option, as they're gluten-free (flour-less), dairy-free, and no processed sugar. Those are actually the only non-negotiable. They were specifically requested by the coordinator for the event, as I made them for a party that she attended, and she loved them.
My only concern with this is I'll be setting up at 11AM and leaving, so everything will be out all day (until around 6). I'm a little worried that anything with fresh fruit won't hold too well for 7+ hours. Plus, everything has to be easily eaten by hand while browsing the store, so nothing juicy or potentially messy. Any ideas that fit those parameters?
Yeah, fresh fruit might not fair well for an all day event. How about some sort of granola or something with a nuts and dry fruit? I know Nicole has a few things like on her blog.
Maybe something like these Low Fat Granola Bars with Bananas, Cranberries, and Pecans Low-fat, still sweet, easy to carry around.
I was going to suggest some kind of granola bar as well (these Honey-Nut Granola Bars are easily adaptable depending on what kind of add-ins you want to use. Maybe add some dried fruit)
Or what about muffins or mini-muffins? These Banana-Blueberry-Oat Muffins are healthy enough to be served in running store

Muffins are a great idea!
But I was also thinking that a fruity option would be good, and these raspberry bars would be absolutely fine sitting at room temp all day.
