Eggs or Potatoes?

DH and I attend a mega-church and I wanted to get more involved so I'm going to be helping with providing food the 2nd Sunday of each month for the tech-team (our church is fancy like that... kinda.) 

I contacted the person in charge and she said I should bring an aluminum pan like 11 X 13 with either eggs or egg casserole or some sort of potato dish 

What do you recommend? I'm looking at oodles of different potato and/or egg dishes and trying to find something fairly cheap but more than just a pan of scrambled eggs.

  • Potatoes would be way easier to make, transport and reheat.  Plus, probably a cheaper option.
  • Please do potatoes.

    Eggs are such a deeply personal decision.

    yes, all of this. 

    Plus, I am not sure if you have ever been in a room with a mass amount of cooked eggs before but it's really gross smelling.  Ick!     Working in a restaurant too many years taught me that certain foods in large quantities are really smelly!

  • Potatoes for sure.  I love cheesy hash brown casserole and it always gets eaten when I bring it as a dish.  But there is not a hash brown dish I wouldnt eat, unless it had bacon in it.  I love bacon, plain - but hate it cooked in dishes.

    I was thinking hash-brownish type of dish, definitely meatless though. Thanks!

  • Potatoes, definitely. The go-to dish around here is Mormon funeral potatoes. It's pretty heavenly, but then again it has potato in it so how could it not be?
