Help with meals please

I'm looking for recipes that are low carb, but I'm also trying to stay away from too much meat and seafood (for cost reasons).  I'm finding myself using a lot of pasta (we LOVE pasta), but I'm also noticing that my pants are getting tight...  Help, please!

  • Eggs are my biggest go to meal, or snack.

    I seriously love them because they are packed with protein and so cheap! I usually scramble them with some cheese or onion or *add your own topping here* 


  • What about veggie-fried rice?  Like pp suggested it has egg in it, and it would also be a great way to stretch seafood or meat into more servings if you wanted to add some.  Using brown rice would make it more filling too.

    Or stuff like Mediterranean grain salad with beans, or quinoa pilaf with asparags and peas.  Both are decent amounts of fiber and protein.

  • We eat a lot of beans, you can check my blog for ideas if you are interested. Dried beans are really cheap and if you have a crockpot you can use that to cook them and freeze in portions for future meals. Check out crockpot365.blogspot.com for the cooking method.
  • Thanks ladies, these are great suggestions.  And I've decided to start with the eggs- veggie omelets on Monday night.  :0)
