I'm looking for recipes that are low carb, but I'm also trying to stay away from too much meat and seafood (for cost reasons). I'm finding myself using a lot of pasta (we LOVE pasta), but I'm also noticing that my pants are getting tight... Help, please!

Eggs are my biggest go to meal, or snack.
I seriously love them because they are packed with protein and so cheap! I usually scramble them with some cheese or onion or *add your own topping here*
What about veggie-fried rice? Like pp suggested it has egg in it, and it would also be a great way to stretch seafood or meat into more servings if you wanted to add some. Using brown rice would make it more filling too.
Or stuff like Mediterranean grain salad with beans, or quinoa pilaf with asparags and peas. Both are decent amounts of fiber and protein.
