Hard boiling eggs: How to unpeel shell easily?
Every time I hard boil eggs, I have a difficult time trying to peel the shell. Does anyone have a wise trick to have the shells peel off easily?
Here is my method: Place eggs in a single layer (don't overlap) and fill with cold water (at least a few inches above the layer of eggs). Boil uncovered, and then remove from heat, cover, and let it sit for 20 mins. Remove the eggs and place in ice cold water for 15 minutes.

My MIL taught me this trick.
Make sure the water you place them in after boiling is SUPER cold. Then break the shell on both ends by tapping the ends on a hard surface. Lay the egg on its side on the hard surface. Quickly roll it against the hard surface gently but firm. This which causes tiny and larger cracks to form through the shell. Then it will be easier to peel
I do this also, I roll it in a paper towel to catch all the little shells. And also, under running cold water to get every last piece.
I like that advice.

The trick to making perfect hard boiled eggs is that you don?t actually boil your eggs ? this causes your eggs to be tough. Simmer instead
Using older eggs means easier peeling because of the air pocket (mentioned in link). The air pocket will be at the wide end of the egg ? so might want to start at that end for easier peeling.
