Made a great flavored butter for swordfish! Also swordfish Q?
Minced shallot, capers & sun-dried tomatoes, lemon zest and a bit of lemon juice.
Very tasty.
Have you ever had swordfish that had fatty cartilage-like "veins" running through it? I've never encountered this before. It was almost like you'd get in a steak, texture-wise. It didn't affect the flavor but it made it kind of annoying to eat.
(no it was not worms so don't go there!)
