My BF and I struggle a bit with what to make for dinner. I am a little picky. I admit it. I am *trying* to branch my tastebuds into the world of seafood because he is so tired of just eating chicken and pork lol. I have tried salmon (hated--too fishy), shrimp (hated-didn't like the texture), scallops (not bad but I don't think they were cooked properly as they were a little rubbery) and swordfish (pretty good).
So, anyone have any recommendations to try? TIA!

This can be made with halibut, cod or other thick, firm, white fish fillets.
Mix one small can diced low-sodium canned tomatoes, TB dried oregano, lemon zest, torn up black and/or green olives and small capers (all to your own taste - I usually use 10-15 whole olives for two packets), a 1/4 cup of white wine or lemon juice.
Salt and pepper skin side of the fish.
Prepare foil packets and lightly oil one half.
Place fish skin-side down on oiled half of packet, spoon tomato mixture evenly over each filet.
Close packets.
Put packets on baking tray (for stability and potential leaks) and bake at 425 for 10-15 minutes, based on thickness of filets.

I also recommend tilapia or flounder, it's a mild white fish that has a nice texture.
I made these recently and they were a hit! They are on the menu again this week.
