vanilla extract-what kind of alcohol?
I've read that rum or vodka make good extract. Which do you prefer to use?

I third the recommendation to use vodka! The first time I made it I poured the vodka in a quart-size canning jar, adding the vanilla beans and let it cure in there. Then after the curing process I left it in that jar and kind of dipped my measuring spoon in it whenever I needed some.
The second time I made it I bought Skyy vodka which comes in a dark blue bottle. I put the vanilla beans in and cured it right in the vodka bottle. It made pouring it out easier for recipes - plus I think you are technically supposed to use a dark colored bottle anyway when you make it.
