making stuffed bell peppers to freeze

Hi

I need advice on making bell peppers to freeze - the making and the freezing part. I have made them for fresh batches but freezer foods is kind of new territory for me. I am worried they will get all mushy or weird when they thaw and cook. Any tips are appreciated.

  • I used Joelen's directions when I made them.  I gave them all to a friend so I can't attest to how they were but she's never let me down.

  • I just made some based off of PreventionRD's blog posted earlier. I added chicken, they're cooling now. Was going to wrap them in tinfoil and put in a ziplock. DH won't eat them so I made them to my taste, and will zap them at work, or nights he's not home.
  • I just looked at Jolean's blog but I couldnt tell if she recommended cooking the peppers before freezing or freezing the prepared peppers and cooking after they are thawed. Can someone clarify? I'm planning to make some freezer meals this weekend. I can do it either way... maybe some of each so the pre cooked ones can just be microwaved for lunch.
