I want to convert this recipe to cupcakes...
My dad requested that I make the
Bobby Flay Toasted Coconut Cake for a BBQ on 3/31. I have made it several times before and everyone loves it. This time I would like to do cupcakes (it's a purely selfish thing, I will want to eat one after baking). Do you think it would turn out just as good if I pipe the custard into the cupcakes, frost it, and top with the toasted coconuts? It's a lot of work, so I would hate to screw it up. :-/

Are you familiar with filled cupcakes, where you carve out a cone of cake from the middle of each cupcake? You could do that and put the custard there (which I think is what you described). I don't see why it wouldn't work, although the ratio of cake to filling to buttercream would probably be different.
Or you could make the big cake and just set some batter aside for yourself to bake in a small pan for a snack...
