I've got family coming over on Saturday for brunch and I won't have a lot of time for prep prior. The wife is a real chef and I don't want to just make simple stuff, so can any of you share some good, easy to make recipes that don't take too long?

I have a quiche recipe in my blog. Easy to put together, you can bake it ahead of time and just reheat when ready to serve.
You can sub pretty much any veggie you like or happen to have on hand. Use cubed ham instead of bacon. Omit the meat altogether.
