Anyone have a good Pad Thai recipe? I wanted to try something new this Friday and have no idea where to start.

I'm actually making pad thai tonight! My favorite recipe is the "Cheater Pad Thai" from the Happy Herbivore Cookbook. It's super fast and really yummy.
"Cheater" Pad Thai
Makes 2 Servings
Ingredients:
1/2 pound rice noodles
1 cup bean sprouts
1 -2 tbs chopped peanuts (optional)
1 lime
2 tbsp soy sauce
1 tbsp smooth peanut butter
1 tbsp sweet red chili Asian sauce
1/4 tsp granulated garlic powder
1/4 tsp ground ginger
1/4 tsp hot sauce, or to taste
Directions:
In a small bowl, whisk 2 tbsp of warm water, soy sauce, peanut butter, chili sauce, garlic powder, ginger and hot sauce together until combined. It may appear too runny at first, but it's not. Let sit for 5 minutes or so, so that flavors combine. Taste, adding more hot sauce if desired.
Prepare rice noodles to package directions.
Mix noodles with sauce and divide into two servings. Top each serving with a handful of bean sprouts, some chopped peanuts, and a squidge of lime juice.

this is the only one I've ever made, and it was great! I used a combo of lime juice and water instead of tamarind I think though because I couldn't find it.
How do you like your pad thai?
It's taken me years to master a orange & spicy version, but I am determined because my seafood allergy is so strong I can't go to Thai restaurants anymore.
There is a vegan restaurant near me that does a pad thai that's more of the brown version- but it's not my style.
If you prefer the orange variety (I am loling at my own descriptions btw) I am happy to share my modifications to Linda McCartney's recipe.
