The Asian-style mashed sweet potatos that you mentioned in yesterday's WFD post sound really good!  Do you have a recipe for that, or do you just kind of eyeball it?

Re: *candreco*

  • I kind of eyeballed them- flesh from one med roasted/microwaved sweet potato, two slices of bacon crumbled, a thinly sliced scallion or two, about 2 tsp of the bacon drippings (was out of butter!), 2-3 tsp soy sauce, 1 Tbsp brown sugar, and 1-2 Tbsp mirin to taste, all mashed/stirred together.  I wish I'd measured/taken a pic, they were really good!

  • Mmmmm, I will have to try that once Lent is over and I go back to eating meat!  Bacon drippings make everything better.  Thanks!
  • I think they'd also be really good if you swapped out the bacon for a little sesame oil and some toasted sesame seeds.
