corn beef brisket, oven or crockpot?

How do you make your corn beef brisket?  I think I did it in the crockpot last time, but I don't remember if I put anything in there with it.  :)

The one I have now is only about 2.5lbs.

  • I have mine going in the crockpot now.  I did a layer of potatoes/carrots/onion, followed by the corned beef, topped with a can of beer.  I let it cook on high for about 4 hours, then added my cabbage and cooked it for another 1.5 hours.  I think you can also simmer it on the stove for roughly an hour/lb.

  • I cooked mine on the stove in a large cast-iron (Le Creuset) pot.
