NDR: Ideas for pulled pork

So I made PW's Spicy Dr Pepper Pulled Pork yesterday.  It is delicious!!! The spicy-ness is all in the juices so the meat is tender and tasty.  I really wanted to try this while TJ was out of town to make sure that his picky taste-buds would eat it.

So now I have a whole ton of pulled pork to eat :) Give me your wacky, yet somewhat healthy ways to eat pulled pork. 

I did lettuce wraps today and that was good, I'll probably do a salad later in the week. 

Also thinking about making some noodles and topping with pork for dinner one night.

  • I've made quesidellas and tacos out of mine before...pretty good.

    I've also done nachos...but there goes the health factor no matter how man veggies ou add! ;)

  • Serve over brown rice with a side vegetable or side salad. Make tacos or a baked potato and add a side vegetable.
  • I would just eat it on a bun. Yum!  A little BBQ sauce if you like. 
  • It also refreezes and reheats fabulously if you get sick of it.

    I'm not a fan of freezer food at all usually, but soup and shredded beef/pork are two things I don't mind that way.

  • It freezes SO well.

    I've started making huge batches just for that (except, usually chicken, not pork) and then to warm it up, I just toss it in a dish (or just use a piece of foil to make a package for a serving or two) and sprinkle a little water on to refresh it. In an oven at 350 or so for a few minutes and it's as good as it was the first time. 

  • Hmmm the ideas! I don't have much freezer space, but if I do get sick of it I'll bag it and freeze it. 

    The baked potato sounds great!!! 

    No clue why I didn't think of tacos! I could probably pull of nachos that aren't horribly unhealthy.

    I think I might pick up some naan and make a little pizza.

  • You could do a knock off Chipotle Burrito Bowl.  Brown or white rice, pork, salsa, beans, cheese, etc.  I actually make the cilantro lime rice so it's pretty darn near the same thing!  (I use this recipe:  http://www.skinnytaste.com/2009/03/chipotle-cilantro-lime-rice-4-pts.html)

    Great idea! I'm actually a cilantro hater *hides from the stares* and I'm allergic to tomatoes (yes it makes life difficult) but thats something that would be easy to make! Thanks.

    It was amazingly simple and turned out wonderfully, I grabbed the smallest pork butt available (5.5#) since I was only cooking for my self. I did a 7oz can of chipotles in adobo sauce vs the called for 10 oz, my store had one choice and one choice only and that was 7oz. 

    The spice is really in the juices, you can taste a tiny bit in the meat but I think even little kids would like it.
