Margarita cupcakes are popular!
Really anything lime or tropical fruit flavored would work.

There's a popular recipe for margarita cupcakes on Confections of a Foodie Bride. (She has two, I believe; go for the non-box mix version.)
That isn't the one I make though. I use Dorie Greenspan's Perfect Party Cake, replacing the lemon zest in the cake with lime zest. When the cupcakes cool, I poke holes in the cupcakes with a toothpick and brush a mixture of tequila and triple sec on them. For frosting, I also use Dorie's swiss meringue buttercream recipe, adding in lime juice instead of lemon juice.

If you google, you'll see some. They all sound amazing, so I wouldn't be able to decide for you!
Hm...well, that is a problem. None of the tequila in margarita cupcakes is baked, so it definitely doesn't bake off. You could leave it out, but then you're just making lime cupcakes. Not that that's a bad thing either.
