So, I just got an email from our local parents magazine. They're having a cupcake competition THIS SATURDAY. So, I have to call and get the scoop bc I LOVE baking cupcakes and everyone says I should have a shop. You only need 12 regular cupcakes but THREE HUNDRED minis. The only recipes I would want to do (because it's one that I actually put together myself - the flavors I did and then I used recipes I found online for each item and adapted it) is filled. I REALLY REALLY want to do this but I would have to do it all Friday while my 2.5 year old is running around. Eeek. Plus I have to stand there with my cupcakes. I think that part is freaking me the eff out a little bit. I really wish I had read about this sooner. I am still waiting to get the paperwork from the coordinator so I can read it. So is it crazy to try to bake that many minis? I have only ever baked them once. I always do full size.
Any tips on how to get the cake out to fill? I have one of the cupcake corers that I use on full size.
Any idea how many minis I can get out of a normal batch for 24 reg size?

I'm not great at being practical when there's something I really want to do either. But dang, 300 mini filled cupcakes, yuck.
When I make minis, they tend to be a little smaller than pp said, so I might get up to 72 out of a batch. So if you need 12 regular and 300 minis, taking into account that you'll want extra in case some are ugly and you'll want to have some contingency with batter so you don't have to mix up an extra batch on the fly...that's at least 5 batches of batter, maybe 6.

I have a mortar and pestle set I never use for what it was intended - so I just use the pestle (the stick) from that and push down the cake in the center. It packs it down on the bottom so the filling doesn't fall out and you get a nice size space to put a filling. If you don't have that - try a glue stick (capped and wrapped in plastic of course!) or something similar to that shape. I never had any luck with the store-bought filler kits - this has worked the best for me!
