this looks and sounds great! I'll have to add to my list of weeknight meals. I have a probably stupid question though. why do you brown it and then throw away the skin - does that just help get flavor in the rest of the dish but cut back on the fat?

Nope! You can really interchange it with toppings, just like you would pizza. I've done bell peppers and mushrooms as well.

Sorry I didn't respond sooner, but yes, this is why. Also, I don't like eating the chicken skin unless it's crispy!
