Pesto Recipes? (Using pesto)

My MIL bought us a huge plastic jar of refrigerated pesto from Sam's Club a couple of weeks ago. The use by date is mid-April so I need to get on it before it spoils. Does anyone have any recipes using pesto? When I make my own pesto I normally toss it with tortellini and grilled chicken strips, but we can only eat so much of that. Is it safe to freeze refrigerated pesto cubes?

Yes, you can freeze it in ice cube trays for future use.

I love pesto as an alternative to basil in caprese salads. 

I toss it with all kinds of pasta. 

I've made a pesto burger, used it in a cream of tomato soup...

I normally mix it in pasta too.

Yes you can freeze it! I freeze them in ice cube trays, then pop them out and place them in a freezer bag.

I always keep pesto in the freezer.

My mom makes this great appetizer using pesto.  Split a baguette lengthwise, then spread pesto along the length.  Top with thinly-sliced apples, then sprinkle pretty generously with shredded Swiss, Gruyere, or Monterrey Jack.  Grind some black pepper over top, then broil them until the cheese melts and starts to get brown.  So good!

I use pesto instead of butter (or mayo, which some people like but I've never tried) on grilled cheese sandwiches.  It's also good for pesto chicken pizza, put some on a whole wheat crust, add chicken, cheese, whatever else you like, and enjoy!
