Another royal icing question?

Sorry for another question on this! I plan to pipe and flood the cookies tomorrow night, and allow it to dry and set on my countertop overnight. In the morning, I?ll add some extra detail work with royal icing.

 

1.        How long does royal icing take to set?

2.        Once the royal icing is dry, am I able to stack the cookies on top of each other to transport to the party?

  • It takes many hours for royal icing to dry completely (I usually give myself at least 24 hours for them to dry - it usually doesn't take that long, but I've had issues in the past with slow drying icing!). But, once it is dry, you should be able to stack them (unless you have small, piped details on them that might break).

    Yikes.  I give them 8-12 hours to dry, but then, I live in the desert.

  • 12 hours is usually good for me but it has taken longer depending on how thick the icing is.  Typically I'll let them sit longer than that before actually stacking or packaging them. But 12 hours is definitely good for adding details. Then the details of course dry a lot faster.

     The humidity here makes the process a bit slower! Plus, I'm a paranoid baker after one particular incident :)
