Our tech team has launched updates to The Nest today. Marshmallow fondant- Is necessary to 'set' it overnight?

I am looking at a marshmallow fondant recipe online and it says to wrap it in a tight ball and refrigerate overnight. Is this step necessary? 

I would like to use it tonight.

Fwiw, I am making flat circles to make 'eyes' for sugar cookies.

  • The recipe I use states, " It is best if you can let it sit, double wrapped, overnight (but you can use it right away if there are no tiny bits of dry powdered sugar). If you do see them, you will need to knead and maybe add a few more drops of water.

  • I've never refrigerated it over night and it's been fine.
  • I didn't let mine sit overnight.  I put it in the fridge for two hours and it was fine.  I also used mine to make eyes for Sesame Street cupcakes.  Good luck.
