Water, beer, margaritas (alcoholic and non-alcoholic), sweet tea, and soda
I have been thinking about guacamole, but I hate how it always gets brown and gross looking so fast. Should I make some and keep in the refrigerator, skip it, or any other suggestions?
How much ground beef and pulled pork should I make for the tacos?

sounds good...doesn't lime juice help with the browning of the guac...I think you are fine to skip it
I would say 4 lb of ground beef and 3 of pork
You can use an acid- lemon or lime juice- to keep from browning. Or you could just buy the guac and it'll stay nice.
I think your menu is fine as is and agree with the 4 lbs beef and 3 pork. I will through out there that maybe instead of the corn casserole, do a plain or lighter corn side. Maybe just some red pepper and lime juice or I think tarheels had a good corn salad. Just something a tough ligher. I'd also consider doing either the queso or the cheesy bean dip. It's hard to say without seeing the recipe, but they sound similar.
I'm also wondering if there is something you could add that doesn't require a chip as an avenue for eating something.
(I also need to toss out the cucumber salsa. It's so good.)
