After work, I need to come home & cook something fairly quickly, and bonus if there are leftovers for either lunch the next day or dinner the next night.
Lately I've been making chicken piccata like it's going out of style. I realize I love it because of a few things:
1. Healthy
2. Delicious
3. I can have it ready from start to finish within 1 hour
4. Only requires a few basic ingredients (olive oil, chicken, flour, lemon, white wine, capers and chicken broth - and I add broccolini and serve it over angel hair.
5. Usually I have all the ingredients on hand
Does anyone have anything that fits these 5 things that would be good to incorporate into my weekly dinner lineup?

I freaking love chicken picatta! Here is my quick and easy tab.
You should try this Athenian Orzo. It is my current quick and easy obsession.

One-Pot Rosemary Chicken with White Beans (you don't need the fennel or escarole, it's still great without them)

The part of the list that is "chicken with various sauces" includes mostly chicken with pan sauces, much like how you make chicken picatta.
