Recreating a pork chop recipe

One of my favorite local restaurants makes an amazing stuffed pork chop and I'm going to try and recreate it for dinner tomorrow. I've Googled for recipes and while I found anything exactly like what I'm making, I think I have enough to piece it together.

The restaurant chops are stuffed with figs, Gorgonzola, prosciutto and walnuts; I'm thinking I should combine this with some bread stuffing. And they have a maple glaze - I found a few recipes that suggest cutting the syrup with a little apple cider vinegar. I think I will pan-sear them and then finish them in the oven with a meat thermometer.

Have you ever made or eaten something similar? Any suggestions? TIA
