One of my favorite local restaurants makes an amazing stuffed pork chop and I'm going to try and recreate it for dinner tomorrow. I've Googled for recipes and while I found anything exactly like what I'm making, I think I have enough to piece it together.
The restaurant chops are stuffed with figs, Gorgonzola, prosciutto and walnuts; I'm thinking I should combine this with some bread stuffing. And they have a maple glaze - I found a few recipes that suggest cutting the syrup with a little apple cider vinegar. I think I will pan-sear them and then finish them in the oven with a meat thermometer.
And here's a picture I got online ... I'm stumped on how to get the nice sauce. Maybe some tomato sauce? http://www.rutherfordmenus.com/images/food/paisanos/maple_glazed_pork_chop_thumb.jpg
Have you ever made or eaten something similar? Any suggestions? TIA
