Ricotta & Proscuitto, what to make?
The other day I made Rachel Rays Proscuitto wrapped Florentine chicken for dinner. I don't normally have or use ricotta or proscuitto, and want to use up the remainder before it goes bad. I have about 3/4 of a small container of ricotta, and 4 or 5 slices of proscuitto. Any ideas on how to incorporate these into a dinner or two? Bonus points if it uses both! I have all the other staples for dinner, shrimp, chicken, ground meat, pasta, rice, chicken stock, etc.

Stuffed chicken breast (stuff with ricotta, sun dried tomatoes, herbs and a little cheese) and wrap in prosciutto
