Wed: Spaghetti & Meatballs in Vodka Sauce (I buy the frozen meatballs from Target & cook in the crockpot w/ a jar of vodka sauce on high for 4 hours)

Fri: White Chicken Pizza (clicky)
Since I travel so much for work, if I don't meal plan for the week, we'll starve or eat take out everyday, lol.

Friday: I'm in Chicago eating bad food all weekend. rock.
Sunday - I did a Mad Men theme - so fondue, swedish meatballs and pineapple upside down cake (made from the Ad Hoc book - very good).
Monday - used the leftover fondue in grilled cheese fried in sage butter. Salad with lime/honey/cilantro dressing using the leftover crudite and pineapple
Tuesday - indian something (korma? i forget). from a jar. with chicken and cauliflower
Wednesday - something easy since I won't be around. DH wants Skyline.
Thursday - use up the leftover meatballs somehow....possibly some kind of bahn mi. and broccoli in anchovy butter (craving that). which doesn't go together at all does it? huh...will have to rethink.

Mmm I love shakshuka. It's a middle eastern (maybe Tunisian/Jewish)? dish of eggs poached in a tomato/pepper sauce. Sometimes I throw in chickpeas for extra protein.
We've been eating well this week. Sunday was a chicken roasted with zaatar and a lentil/sour cherry/Gorgonzola/spinach salad.
Last night we made chile rellenos with corn/queso fresco stuffing and a black bean/pepita/roasted tomato salad.
Tonight is black pepper tofu and broccoli with chiles and garlic.
Tomorrow I'm making spicy south Indian style red lentils and probably some potato/ pea fritters with green chile.
Thursday H is out of town so l will eat leftovers. Friday I'm going to a party and I'm flying to Dallas on Saturday.
shakshuka is a middle eastern dish--eggs baked in a spiced tomato sauce with lots of feta, parsley and pita. I make something like this, except I add chickpeas to mine.

Buffalo Chicken garbage bread (from Pinterest) last night was really good. Not healthy, but tasty. DD had organic chicken tortilla soup b/c I'm terrified of her AR. I'm having the leftover soup for lunch.
Other nights we're having: chicken caesar pita pockets, beef and bean enchiladas, lemon and chive pasta, and pita pizzas.
Tonight, since I'll be home for less than 30 minutes between work and a hospital tour, my dad's bringing over Steak n' Shake.
Monday was - buffalo chicken baked potatoes.
Tuesday - alfredo chicken and brocolli (using the leftover crock pot buffalo chicken) and salad
Wednesday - Spring rolls (w/ tofu)w/ peanut sauce, and miso soup
Thursday - Make your own tacos. Z loves getting involved and i have been trying to include a "bar" type food each week.
Friday - Date night to Gyu Kaku.

yep. Mine usually has some veggies in it--chickpeas and carrots. And melty feta on top. But yeah its awesome. Also, bonus. Its fast and cheap. Perfect for weeknights

I completely agree. I'm going to try this. My husband is not the biggest fan of eggs for dinner, but I am slowly working on him.
Sunday - Caprese sandwiches on ciabatta with homemade mozzarella, heirloom tomatoes, basil salad and balsamic vinegar.
Monday - vegetarian reubens in the panini press with salad
Tuesday - vegetarian gyros w/ feta, tzatziki, tomatoes, onion and cucumbers, salad
Wednesday - meeting some people at a beer and brats place
Thursday - I'm on my own, so maybe leftover tacos (still have fixings from last week)
Friday - fried tofu with sauteed bok choy in homemade peanut sauce
Saturday - work dinner for my husband
For lunches this week we've been eating leftover vegan shepherds pie from Friday night, leftover mozzarella and tomato sandwich fixings, and hummus with pita/pita chips.

Saturday: clean out the fridge night or order out.

Sunday: Coffee-chipotle pulled pork over cheese grits, Brussels sprouts sauteed with onion and bacon.
Monday: Grilled cheese and tomato soup.
Tuesday: Shredded chicken taco salad with sour cream-lime dressing.
Wednesday: Hawaiian BBQ pizza (with leftover pulled pork and BBQ sauce), salad.
Thursday: Tex-Mex slowcooker stew, brown rice.
Friday: Cheeseburgers, some type of roasted veggie.
We had a meat/chicken heavy week because last week my BFF was in town. She is vegetarian. We ate vegetarian every night. H was sad.
