Fresh cilantro is wonderful on tortilla soup. I always make this when I have fresh cilantro on hand. I really like Pioneer Woman:

And on a side note, the best way to keep cilantro fresh and ready for eating is cutting the ends and leaving it in a cup of water like flowers. I leave mine on the windowsill, but I think you can put them in the fridge with water, too. GL
Thanks for the tip on keeping the cilantro fresh. That recipe for the guacamole looks good and so does the pot roast beef tacos that they showed on that episode.
