What are your go-to sides for summer BBQ's?
We're headed to a friends tonight for a BBQ and I'm looking for some new side dishes to throw into the mix of what I always bring. What are your favorites?
Re: What are your go-to sides for summer BBQ's?
My all time favorite is a pasta salad with cherry tomatoes, roasted peppers and either fresh mozzarella or provolone (or both) diced up. Tossed in a simple homemade vinegarette, with fresh basil of course
yum I am so looking forward to BBQ season
I really like spiral pasta, sun-dried tomatoes, feta, kalamata olives, EVOO, balsamic, basil... sort of make it up, but tasty!
Other things: mac & cheese, potato salad, tortellini salad, harvest salad (lettuce, apples, blue cheese, walnuts etc)... gah! I wish it was warmer here!

It might be a little early for this time since this recipe calls for fresh corn on the cob but I came across this salad and made it like 10 times last summer. Something about the dressing because it has so much cilantro packed in instead of just adding chopped cilantro to the salad itself. I have had many similar salads in my life but this one blows them ALL out of the water.

ETA: I didn't even realize how similar is to THC's recipe. Although the fresh mozz is an awesom addition. I love the idea of grilling the corn first too though. I may try that next time.
Sort of similar to what other posters have mentioned, but black bean and corn salsa:
black beans, white sweet corn kernels, avocado chunks, tomato chunks or cherry tomatoes, jalapeno, lime juice, and cilantro.
I could eat the whole bowl by myself.
these are totally different from each other, but equally delicious!
