Please help with my Easter menu

I'm cooking my first holiday meal on Sunday (we're celebrating Easter a week early since H will be gone.)  I used to live in a tiny house and didn't have room for all our family but we moved so the torch has finally been passed to me! I am super excited but need some help figuring out a menu.  For our protein we are having Turducken (not my choice but H has wanted one for a long time so I gave in) H also wants sweet potato casserole and mashed potatoes.  I'm thinking roasted asparagus, but not sure what else.  Any suggestions? Also, has anyone cooked a Turducken? Any tips/how does it taste?

  • for sides i'd also include some other roasted veggies with that. you can easily throw in carrots and brussel sprouts and roast them too.

  • Are you making the Turducken yourself or purchasing it?  I'm just curious because I've only ever seen this on TV.
  • Add a salad in to the mix

    romaine, butterhead lettuce, peeled orange sliceds and honey mustard dressing 

    or spinach, strawberries and poppy seed dressing.  

  • Your menu sounds more like Christmas or Thanksgiving, except the asparagus - definitely keep that.

    I'd add a salad that's spring-y - maybe something with strawberries. Or sometimes we add some edible blossoms to an arugula or spinach salad to make it more festive. Other ideas (that use spring produce) are some kind of grain salad - couscous with lemon, peas, mint & pea shoots, or a tabbouleh salad. (I have recipes for both in my blog). Or a roasted beet salad with vinaigrette, fresh herbs, and goat cheese crumbled on top.

  • I agree with PP that I would do some kind of salad/more vegetables. Just wondering, how many people are you hosting?  Could you provide another protein/meat item for your guests?  It seems like you are not sure about how your Turkducken will come out. Looking it up, it seems like a pretty unusual dish so if you can apart from the veggies I would come up with some other alternative entree (maybe spaghetti and meatballs or something else easy).  I go to a large Easter party every year and there are usually appetizers, sides, and three choices of entree: lamb, pork, and lasagne and people sample all three entrees.  Given you are making an entree that even you don't seem excited about, I would suggest it might be good to give your guests another alternative.  Also, not sure if I'm stating the obvious, some kind of dessert should probably be included (including possibly fresh fruits to give the meal a more springy feel).

  • Thanks for the help ladies...the menu is more winter food because H was deployed over those holidays and just recently came home, he will likely be deployed again this year so we are definitely catering to him and making his favorites! 

    I've added a spinach strawberry salad and one of the guests is bringing a fruit tray and a ham.  We'll also do deviled eggs. 

    Thanks again! Hopefully the Turducken will be good, if not, H won't hear the end of it for a while, he is really excited for it!
