Sweet Italian Dressing ~ kind of homemade
1 envelope of Italian dressing mix
1/2 c sugar
1/4 c apple cider vinegar
1/3 c water
1/2 cup olive oil
put in container & shake to mix well

I'm having this Chipotle knockoff dressing twice this week - once on a salad accompanying some turkey burgers with pepper jack cheese, and once in a salad with the addition of grilled shrimp and a small quesadilla on the side.
For those who'd rather not link:
1/2 cup red wine vinegar
1/3 cup honey
2 t Grey Poupon Dijon mustard
1 1/4 t ground chipotle powder
1 t lime juice
3/4 t black pepper
3/4 t salt
1/2 t paprika
1/4 t garlic powder
1/4 t onion powder
1/4 t dried oregano
1/2 cup extra virgin olive oil
1. Combine all ingredients, except oil in blender and blend on low speed
for ten seconds.
2. SLOWLY drizzle olive oil into blender on low speed.
3. Chill for at least an hour.
Yield: 1.5 Cups
Buttermilk-Chive Dressing
This salad has a really good Cilantro-Lime Vinaigrette - Cherry Tomato-Black Bean-Corn Salsa
