I am trying to make a grocery list/ menu plan. I can't think of what I want to make this week. It needs to be easy as I still can't be on my feet too long, and I might make H make it so it has to be really easy we have already done our easiest dinners, hamburgers etc. Also I need something with veggies and flavor in it. So Ideas? What are you cooking this week?

Do a veggie stir fry. Or easy crock pot meals.
Get a pot roast, add potatoes, celery and carrots. Throw into the crock pot with a packet of dry onion soup mix. Add water to cover the roast. Ta-da.
Salsa chicken: frozen chicken breasts(I use boneless, skinless) add 1 C. of sour cream(or greek yogurt), 1 C. salsa, 1 packet of dry taco seasoning, 1 can of kernel corn, 1 can of black beans, 1 can of pinto beans. I shred it and make tacos.
Chili is easy with either ground turkey or hamburger. Add a packet of chili seasoning, an onion, garlic, kidney beans(or whatever beans you like), some stewed tomatoes.
I love my crock pot.
I'm going to my cousin's bridal shower today so tonight is going to be really simple.
Sunday- spinach ravioli with pesto, sausage for E, roasted asparagus, and French bread.
Monday- Sloppy Joes made in the crockpot on rolls. Broccoli.
Tuesday- leftovers
Wednesday- I'm hoping E makes his super yummy mango chicken and rice, we will have asparagus as our veggie.
Thursday- leftovers.
Friday- we will probably do leftovers or pick up a pizza. I have a tiny fridge and I need room for all of our Easter stuff.
ETA: Sloppy Joe recipe
1 pound ground beef or turkey browned.
1 can diced tomatoes
1 can tomato sauce
green bell pepper chopped
1 small onion chopped
seasoning to your tastes
about 1 cup of ketchup
I like to add green beans and corn too but obviously its personal pref so add whatever other veggies you like that sound like the could work in sloppy joes.
This cranberry chicken can be made in the crockpot. Just throw all the ingredients in, make sure the chicken is covered and cook on low for about 8 hours. I serve it over rice with asparagus.
You can do lasagna in the crock pot too. There is a note at the bottom of this recipe on how to do that.
The Dogs and Us
We made salsa chicken tonight (slightly different than blt's but same concept) so there will be leftovers, we're making chicken w fried rice, cauliflower pizza, roast beef, tortellini, maybe a real pizza, probably another chicken meal- I'm thinking green chili chicken, and a beef stew. Maybe breakfast for dinner one night too. I have different veggie sides like roasted broc or cauliflower, zucchini, frozen veggies, and other sides but nothing has really been allocated specifically.
