Has anyone used coconut oil in frosting?

Does it work, or just melt all over?

Did you still use butter?  More butter or more coconut oil?

Re: Has anyone used coconut oil in frosting?

  • I used part Earth Balance and part coconut oil to help with the stability.  I didn't keep using it because it did have a strong coconut flavor.
  • earth balance has a coconut butter that i've used before. People noticed the hint of coconut taste in the vanilla frosting.

I'd think it would melt at room temperature. I wouldn't use all coconut oil, if using at all.
