Help with what to make for lunch?

I am serving lunch for company we are having, but we aren't sure what time they will be arriving. Depending on traffic etc, they could be anywhere from noon til 2ish.They are also 2 separate couples so they could arrive at different times. I have to work and then plan on coming home when they call to tell me they are near. What can I make that could be made the night before and put in the fridge just to be pulled out when they arrive? I am already planning on a fruit tray, but I'm not sure what else? Ideas?

  • I'd do stuff for sandwiches (lunch meat, cheese, condiments, different types of bread) that they can make themselves.  Maybe a premade pasta/potato salad and some chips or pretzels also.  Easy to store in the fridge and guests can assemble as they come.  
  • Chicken Salad on Croissants

     

     

  • Are you looking for something impressive or something to make them not hungry?

    I second the sandwich station idea with pasta salad and maybe some deviled eggs. 

    If you do chicken salad (not a bad idea) I would offer something else, there are a million ways to make chicken salad and you can't guarantee that you won't run into allergies.

  • I was also going to say chicken salad on croissants. You can cheat by getting the chicken salad from Costco, and their croissants are great. I'd also cut up lunch meat and cheese for those that would prefer that to chicken salad. Fruit salad, chips, and cookies and you're good to go.

  • Thanks ladies! I think I'm going to go the chicken salad route, no one has any allergies :) I didn't even think of the pasta salad, I have a great recipe for that too, so now I'm very excited, Thanks for all the help
