Freezing pizza- help

I decided to make some pizzas and freeze them... I amd ethe crust, made on and ate it for lunch.... now I'm stuck on the best way to make them and freeze them...

Freeze crust, then add sauce toppings cheese then freeze? Then just cook frozen like I owuld store bought kind?

  • I'm currently experimenting on the best way to freeze pizza. Every Friday I make pizza from scratch, and I use 2/3rds of the dough for pizza that night, and the other 1/3 for a freezer pizza. I assemble toppings on both pizzas (on parchment paper) like I'm going to cook them both, only I transfer the mini one directly to the freezer for a "flash freeze". After about an hour, I take it out, wrap it well (keep it on the paper) and put it in a freezer bag until I'm ready to use. Since it's already assembled, it doesn't take as long to thaw as a frozen ball of dough does. I usually thaw it in the fridge, and take it out for the 30-ish minutes while my stone is heating in the oven. This method works extremely well for me, my only complaint is that the dough doesn't rise quite as nicely (from being frozen) as it does fresh. The taste is still amazing though, and nothing beats delicious, homemade/pre-made pizza in minutes! HTH!
